Chana dal, Toor dal, Urad dal, Red chilli, Coriander seeds, Fenugreek, Cumin seeds, Black pepper, Turmeric, Coconut, Curry leaves, Asafoetida.

1. Heat oil, ghee or coconut oil in a pressure cooker until aromatic.
2. Add mustard seeds and let them splutter.
3. Drop in curry leaves and green chillies to release their flavour.
4. Add onions & veggies, sauté until the vegetables are half cooked.
5. Sprinkle in salt, asafoetida and Varahi’s Tiffin Sambar Podi for instant aroma.
6. Add required water and tamarind pulp if needed (optional).
7. Close the lid and pressure cook until everything comes together.
8. Now, Open the cooker and bring the sambar to a boil again.
9. Finish generously with fresh coriander leaves and switch off the stove.

Serve hot with Idli, Dosa, Vada, Pongal, Upma & Many more.
